In many cultures, it is customary to start the meal with an alcoholic drink in order to stimulate the taste buds and prepare the stomach for the meal. This drink is called an aperitif, after the Latin word Aperire (open). Aperitifs are divided into 3 main groups: vermouth, aniseed and bitters.   • Digestifs are drinks customarily consumed after a meal and contain many herbs that assist the digestion process.
